Raw Materials

A Good Coffee Starts with the Choice of Raw Materials.

For this reason, Kimbo SpA dedicates great care to selecting green coffees directly from the countries of origin. All phases of coffee plant cultivation are carefully monitored and subjected to multiple checks. This ensures that the plants grow healthy and produce excellent quality red berries. These berries contain the most precious treasure: the green beans. The beans are dried in the sun, hulled, and then shipped to Italy.

SELECTION

There are two main varieties of coffee: Arabica, which is intense and sweet, and Robusta, which has a spicier and more bitter aroma. The experts at Kimbo SpA select the best raw coffees from the two main varieties on-site and immediately send the samples to the Neapolitan factory, where a team of experts performs product and chemical tests. Then it’s time for the tasters, who approve the raw material using their nose and taste buds.

Roasting

Once the batches of coffee have passed the tests, they are stored and sent to the roasting plant. The coffee is brought to a temperature of 160°C to 250°C for a time that varies from 8 to 12 minutes. The roasting process occurs in three phases: drying to eliminate moisture, the actual roasting, and cooling to room temperature. It is during this phase that the coffee acquires its aroma. A lighter or darker roast results in a milder or stronger color and flavor. The experience of the Kimbo experts is therefore crucial in determining the ideal temperature and duration, controlling the process in real time.

MIXING

Blending is the most important step. Each batch of coffee is selected and evaluated based on its sensory profile, and each blend must combine the prized qualities of different origins to achieve the ideal result: a perfect balance of flavor and consistent quality. Here, the human element is decisive.

Packaging

The final phase, essential for maintaining quality.

For whole beans, the process is done in a protected atmosphere, while ground coffee is vacuum-packed immediately after it is made. In this way, time stands still, so when you open it, you can enjoy the aroma and flavor of freshly roasted coffee.
